September Newsletter Dear Leanne I started out this introduction for the eBlast with a smile on my face. That's because I just read the content that the team has placed on my desk. I told them that this edition is one of my favorites. It is full of staff, stories and some good "fixin's"! I probably should have included some law related stuff, but it would just take away from the peanut butter ball recipe. I know you will enjoy these. By the way, it does count as the September edition; even though we sent it on the last day of September.... right? I hope this puts a smile on your face; just as it did for me. Sincerely, Joel D. EMPLOYEE SPOTLIGHT:
Nicole Hylton Paralegal
Nicole Hylton was born in Hartford, Connecticut and grew up in Granby, Connecticut. She later attended Johnson State College in Vermont, and graduated with a Bachelor of Arts degree in Psychology. Nicole moved to Greenville, South Carolina. She has three sons; Carson (14), Avery (11), and Corbin (5). On August 30th, Nicole married Sean Hylton. How did they meet? Well... they were neighbors. She laughs that she only had to move across the street after the wedding.
Nicole was encouraged to become a paralegal by an attorney who saw "paralegal skills". So she enrolled in the Greenville Technical College Paralegal program. While in school, one of her professors highly recommended her to our firm. Soon, we made her an offer she could not refuse. She has been with the Firm for 6 months now and says, she "loves working at JBF! The clients inspire me and the cases are all different. The people in my office are awesome to work with! Not only are they great co-workers but they are friends as well." In her spare time, Nicole enjoys spending time at the beach, entering 5k races with her children, and cheering them on at baseball and soccer games.
September Recipe: Peanut Butter Balls This month features one of our paralegal's special recipes. Ashley brought in homemade peanut butter balls that were too good to ignore. So, we decided that her recipe should be on spotlight. The temptation recipe for Fall Peanut Butter Balls:
Ingredients: 1 cup creamy peanut butter 1 to 2 cups of powdered sugar 1 stick of softened butter 1 bag of chocolate chips To make: Mix peanut butter and butter together. Add powdered sugar (Ashley does it in ½ cup increments and blends well after each addition). The consistency is correct when it no longer sticks to your fingers. Refrigerate the mixture for 30 minutes. Remove and form ¾ inch balls and place on cookie sheet on wax paper. Place the tray in the refrigerator for an additional 10-15 minutes. While these are cooling, get a small pan and begin melting the chocolate on the lowest stove setting possible, stirring constantly. Once the chocolate is fully melted, remove the balls from the refrigerator and, using a toothpick, pick up the balls and dip them in to the chocolate. Once all of the balls have been dipped in chocolate, refrigerate for an additional 45 minutes or until ready to be served. Then... keep some for yourself before placing on the counter.
