Excellent take on the current understanding of antioxidants and lipids By Karl Most books that talk of antioxidants make assumptions on epidemiological data without understanding the limits of such studies. Edwin Frankel clearly understands what science can and can not KNOW. Sadly, the understanding of Scientific philosophy is missing from too much of what is passed off as science - thus this book is a refreshing break from the torrent of misinformation I get in much of my reading. The last chapter gives probably the best review of the current understanding of oxidized lipids and biological systems - something that the medical community is quite a ways behind. ( LDL is not the devil - it is actually oxLDL and thus understanding the oxidation of lipids is key to understanding dietary health risks. About the only thing he missed was that it is only when blood glucose is elevated that dietary fats become an issue - and that blood glucose levels are part of what causes our bodies to oxidize and cross link lipids into unhealthy bits in our bodies). In earlier chapters he makes clear that the standard systems for calling things 'antioxidants' are gravely flawed - several so called antioxidants - which work well as storage antioxidants - can actually be pro-oxidants in vivo. He points out that there is no universal definition of how to classify something as an antioxidant (thus you might want to think twice before falling for antioxidant advertizing hype.)
